Lycopene is dark red powder or oil like liquid, insoluble in water, difficult to dissolve in methanol and other polar organic solvents, soluble in ether, petroleum ether, hexane, acetone, easily soluble in chloroform, two vulcanized monomer, benzene, oil and so on. The solution of tomato red vegetable oil is yellow orange, and the melting point is 174 degrees centigrade.
As a planar conjugated polyunsaturated alkene, lycopene is very active and is easily oxidized by oxidation, ultraviolet and temperature, and can be transformed from trans structure to CIS structure. When lycopene molecules change from trans structure to homeopathic structure, the color becomes lighter and the melting point decreases.
