Ferulic acid is mainly used in the food industry to prepare natural vanillin, antioxidants, preservatives, crosslinking agents and functional accelerators.



Living organisms are constantly attacked by endogenous and exogenous reactive oxygen species, which induces a series of diseases, such as atherosclerosis, cancer, cataracts, and age-related macula. Therefore, antioxidant damage is the key to control these diseases. It has been shown that ferulic acid has a good antioxidant activity and has a strong scavenging effect on hydrogen peroxide, superoxide radical, hydroxyl radical, and peroxidation nitroso.

It not only quenches free radicals, but also regulates physiological functions of human body. It produces free radical enzymes and promotes the production of enzymes that scavenge free radicals. It can greatly increase the activity of glutathione transferase and quinone reductase, the activity of tyrosinase and the binding of phosphatidyl ethanolamine to protect the membrane lipids from free radicals.

Prevention and treatment of coronary heart disease

Reduce myocardial ischemia and oxygen consumption. It has been used in the treatment of coronary heart disease and angina pectoris. Atherosclerosis is the most important and fundamental cause of coronary heart disease. The cause of atherosclerosis is the oxidation of lipids by free radicals. Prevent atherosclerosis by inhibiting lipid oxidation, lowering serum cholesterol and antithrombotic effect, thereby treating coronary heart disease.


It has a significant inhibitory effect on influenza virus, respiratory tract, cytosolic virus and HIV. The effect on bacteria has been more broad-spectrum. It has been found that ferulic acid has been able to breed pathogenic bacteria such as Shigella, pneumoniae, Enterobacteriaceae, Escherichia coli, citric acid bacilli, Pseudomonas aeruginosa, and bacteria that cause food corruption in 11.

Anti mutation and anti-cancer effect

The anticancer activity of ferulic acid is related to its activity in activating detoxifying enzymes such as glutathione S-transferase and quinone reductase.

Its metabolism in food

In food contains water soluble, fat soluble and bound states in three states. Ferulic acid in water is found in the cytoplasm of plants. The ferulic acid in this state combines with some small molecules to form a soluble state. Fat soluble state refers to the combination of ferulic acid with some fat soluble substances, such as gluten, mainly in the waxy layer of plant surface. Bound state refers to the combination of ferulic acid with plant cell wall material in the form of esters or ethers. Both water soluble and fat soluble ferulic acid complex are easily absorbed by the human body. The blood reaches the kidney, liver, lung, spleen and whole body through the blood. It is quickly removed from the urine by metabolism and will not accumulate in the body, but the excretion of the excrement is very small.


It can be obtained by chemical synthesis and extraction from plant materials.

Chemical synthesis

It is synthesized by condensation reaction with vanillin and malonic acid as raw materials, anhydrous pyridine as solvent and piperidine as catalyst. However, the method has obvious defects, because the ferulic acid obtained by it is a mixture of CIS and trans ferulic acid, with a long reaction time, large amount of solvent and low yield.

Plant extraction

Obtained from plants in three ways: one is obtained from the binding of ferulic acid to some small molecules, two is obtained from the cell wall of plants, and three is obtained by tissue culture.

The alcohol extract of rice bran contains a variety of sterols and terpenoids ferulic acid, the most typical substance is Y- cervin. It accounts for the 1.5%-2.8% of rice bran oil. At present, the industrialization method of producing high purity trans ferulic acid is to hydrolyze 8h with sodium hydroxide or potassium hydroxide at 90~100 C, and then the pH value of vitriol to acid in order to precipitate ferulic acid.
