Product feature application
Using chlorogenic acid as a reducing agent and ascorbic acid as a control, the ability to reduce Fe3 + was determined. The results are shown in the figure. It can be seen, the system solution at a lower concentration, the reduction of chlorogenic acid and ascorbic acid increased with increasing concentration, the color of the solution eventually turns blue.
This is due to the reduction of Fe3 + to Fe2 + by chlorogenic acid and ascorbic acid and the formation of the blue coordination compound KFe [Fe (CN) 6] by Fe2 + and K3Fe (CN) 6, which has a maximum absorption peak at a wavelength of 700 nm. The color change of the solution indicates that the redox reaction of chlorogenic acid occurs. Combined with the size of the absorbance, it can be seen that chlorogenic acid has a stronger reducing ability than ascorbic acid.
